Strawberry Tiramisu

Ingredients
Lady Finger Biscuits
- 2 Egg Whites
- 1/4 tsp. Cream of Tartar or lemon juice
- 60 g. Sugar
- 2 Egg Yolks
- 60 g. All-Purpose Flour / Cake Flour
- 1 tsp. Corn Starch
Eggless Tiramisu Cream
- 125 g. Mascarpone Creamcheese
- 15 g. Powdered Sugar
- Whipped Cream (130 g. Whipping Cream + 13 g. Sugar)
- Powdered Sugar for sprinkle
- Fresh Strawberries
Coffee Syrup
- 6 g. Instant Coffee
- 60 ml. Hot Water

- Medium mix bowl
- Whisk
- Mesh sieve

- Baking pan (I use 6" Heart mold)
Instructions
Lady Finger Biscuits
Preheat oven to 160°C, upper and lower heat.
Place Egg whites in mix bowl to make meringue. Using electric hand mixer, Whip on high speed until become foam. Add cream of Tartar or lemon juice, continue whisk about 1 minute. Gradually add sugar while whipping. whip until the whites hold stiff peaks. continue whisk on low speed to reduce large air bubbles.
Add egg yolks into meringue. Using spatula, fold until almost combined. Sift all-purpose flour and corn starch into egg mixture. Gently fold until well combined.
Fill a large piping bag with the batter and pipe the batter on parchment paper. Bake in 160°C for 15-17 minutes, or until just beginning to turn golden around the edges. Allow cool completely before using.
Eggless Tiramisu Cream
To make Tiramisu cream. Add whipping cream and sugar in mix bowl. Using electric hand mixer, beat on high speed until stiff peaks. Set a side. Add Mascarpone cream cheese and powdered sugar in different mix bowl.
Using spatula, mix until well combined. Add whipped cream into Mascapone cream cheese mixture. Gently fold until well combined.
Assembly
Place ladyfinger into the mold, gently pour coffee over it. Spread half the mascarpone cream onto the ladyfingers in one even layer. Arrange strawberry and spread remain mascarpone cream onto the strawberry in one even layer.
Cover with plastic wrap and let chill in the refrigerator for at least 3 hours (if you can wait 24 hours, all the better) before slicing or scooping to serve.
Dust top layer with strawberry powder or cocoa powder.
