Ingredients
Crepe
- 1 Egg
- 20 g. Sugar
- A pinch salt
- 40 g. All-Purpose Flour / Cake Flour
- 125 g. Milk
- 20 g. Melted unsalted butter
Whipped Cream Filling
- 200 g. Whipping Cream
- 20 g. Powdered Sugar / Refined Sugar
- Fresh Strawberries for decorating
Tools
- Medium mix bowl
- Whisk
- Mesh sieve
- 1/4 Measure cup
- Piping Bag
- Non-stick pan
- Wire cooling rack
- Small bowl
Instructions
Crepe
Place Eggs, sugar and salted into mix bowl, whisk until combined. Sift all-purpose flour into egg mixture. Gently fold until well incorporated and no lump. Gently pour milk into the batter, whisk until combined. Then add butter, mix until combined.
Place non-stick pan over medium heat and add a small amount of oil or unsalted butter to coat the bottom of the pan. Once the pan is getting hot, pour in about 1/4 cup of batter. Immediately pick up the pan and swirl it to coat the batter into an even layer on the bottom of the pan. Cook until the crepe is started bubbling, about 1 1/2 minutes.
Using spatula, flip the crepe. Cook the second side briefly, just to set the other side, about 30 seconds. Cool completely in wire rack.
Repeat with the rest of the batter.
Whipped Cream Filling
Add whipping cream and sugar in mix bowl. Using electric hand mixer, beat on high speed until stiff peaks. Fill the piping bag with whipped cream.
Assembly
Place a crepe in small bowl. Pipe whipped cream into the middle of the crepe. place strawberry on it. Wrap the crepe. Serve immediately or chill in refrigerator until need. Enjoy!
